EGYPTIAN BISSARA - FAVA BEAN AND DILL DIP WITH CRISPY SHALLOTS

Bissara: an Egyptian fava bean dip, herb green and creamy, with crispy shallots and Aleppo chilli. Older than hummus, and better.

PANZANELLA x FATTOUSH

Italian panzanella meets Palestinian fattoush: super ripe tomatoes, grilled ciabatta, sumac and pomegranate molasses. Summer in one bowl.

STUFFED ONION YALANJI

Palestinian onion dolmas stuffed with rice, herbs and pomegranate molasses, baked slowly until deep brown and sweet. Traditionally, entirely vegan. Entirely delicious.

ROASTED POTATO SALAD WITH PISTACHIOS AND DILL
