This cake started as something I made for Olive’s first birthday. It was really important to me that her very first cake was something I made myself, with ingredients I actually felt good about. No sugar, no weird stuff. I really wanted real food that allowed us all to celebrate her birthday and keep her from having a tantrum or sugar crash.
And now I make her a homemade cake every single year. The first year was this one. In my second year I made cupcakes. It has become our thing and I love it.
But here is what I did not expect. Everyone started making this cake. My friends, people in my community, anyone with a kid’s birthday coming up. I have gotten so many messages about it. It is one of those recipes that sounds like it should not work and then you make it and you are like, oh, this is actually really good.
I also made it for my niece’s first birthday a few weeks ago and the kids completely lost it. Faces covered, smashing into it, the whole thing. Not one of them noticed there was no sugar.
That is the whole point!
I know the no sugar first birthday cake thing is controversial. Some people say just give them the sugar, it is one day. And honestly I understand that. But my take is that kids are going to have sugar thousands of times in their lives. Their first birthday is one moment where I can give them something just as special without it (especially if they have never tasted it before). The banana naturally sweetens the cake. The frosting is heavy whipping cream, cream cheese, and freeze dried strawberries blended into a powder that turns the whole thing pink. It is creamy and sweet and you genuinely do not feel like anything is missing.
It is also really easy. I need to say that because cake can sound intimidating. This is not that kind of cake. Oats, banana, Greek yogurt, eggs. A few steps and you cannot mess it up. I promise.
Oh and the leftover pieces of the cake? I cut them into squares and Olive eats them at breakfast. It is basically an oatmeal banana bake at that point. Nothing goes to waste.
