I love making a big batch of these because it turns into meal prep for the whole week without much extra effort on my end. Troy, my husband, grabs a few from the fridge whenever he wants a quick snack, or he will take them to work with some ranch and veggies for lunch.
We all love buffalo chicken, but making it in the air fryer makes things so much easier. You get that crispy, golden texture without needing oil, so it’s healthier than deep frying and way faster than thawing a bag of frozen tenders (filled with seed oils) and waiting around for the oven.
This one’s also great if you’re still getting the hang of your air fryer. A handful of simple ingredients, under 30 minutes, and it turns out surprisingly juicy every time. It’s low-carb and paleo too, so it works for pretty much everyone at the table, plus gluten-free and nut-free (two ways I am personally eating right now).
And since they hold up in the fridge for a few days, they’re my go-to for snacking, meal prep, or piling on a salad when I want lunch to feel a little less boring.
