Okay so Troy is on a clean eating mission and I am so here for it. When he was playing college basketball, he lost 20 lbs one summer to get in shape and challenge himself. He did this with no extreme program, he just cleaned up what he was eating. High protein, lower carbs, no sugar, no gluten, mostly whole unprocessed foods. And dessert was literally apples with honey. That was it. And it worked really well for him.
Now he is back in that headspace and honestly it could not have come at a better time because this is genuinely just how I eat most of the time anyway. As a certified nutritional therapist, eating high protein whole foods is something I am really passionate about and I have seen firsthand how much it changes how you feel day to day. So cooking this way for both of us and our 3-year-old does not feel like a chore at all, it just feels like normal life.
What I love is that he is actually open to trying new things. He had quinoa for the first time recently and he liked it. He is back on the sweet potato bandwagon which I am thrilled about because sweet potatoes are so underrated. And he is really focusing on protein first at every meal which is one of the simplest shifts you can make that has a huge impact on how full you feel and how your body responds. I am excited to be the one cooking for him through this and I really wanted to share what we are actually eating because I think a lot of readers may find these meals quite helpful.
This is a simple meal. Sweet potatoes, green beans, mushrooms, and crispy seared chicken strips coated in arrowroot starch that get this incredible golden crust when they hit the pan. It tastes way more indulgent than it actually is and everything comes together in about 30 minutes with most of that being hands off time in the oven, which I love.
And if you are a mom trying to get dinner on the table during nap time, this one is genuinely perfect for that. You put the sheet pan in the oven, then you put the mushrooms and chicken on the stove while it roasts, and by the time the baby wakes up you are basically done. I actually keep everything warm on the sheet pan in the oven on the lowest setting until we are ready to sit down and it works perfectly every time.
