Elote is one of the most complete flavor experiences in street food. Sweet corn, char, chili, lime, cotija, crema — every element playing a different role, every bite hitting every note at once. It doesn’t need to be improved. It needs to be understood.

This recipe is about understanding it deeply enough to translate it into something new.

It starts with a charred corn broth — built from the cobs, husks, and roasted vegetables that most recipes throw away. That broth becomes the base of a creamy elote soup that tastes exactly like the street corn it’s built from. And then — before the soup is even finished —that same broth gets pulled and used to hydrate a sourdough focaccia dough. The bread and the soup are the same dish, built from the same liquid, expressing themselves in two completely different forms.
