Sometime last year, I learned that pesto isn’t always made up of basil. Traditionally, yes, but it doesn’t HAVE to be. It can be made from almost any leafy green - arugula, kale, spinach, cilantro, etc (but don’t try romaine; that doesn’t sound like it would be good at all lol). And since learning that, I’ve been hooked on making arugula pesto and a kale cashew pesto (inspired by the kale pesto from Trader Joe’s); however, as part of my ingredient prep for the week, I wanted to switch things up a bit and make this Triple Green Pesto Pasta.
I’m just over here breaking all the rules lol.
