If you've been here for a while or you follow me on Instagram and YouTube, you know that I'm a big fan of ingredient prep, which is a type of meal prep. Instead of creating the same individual meals for breakfast, lunch, and dinner, ingredient prep is more about prepping the components of a meal — protein, carbs, veggies — that can either be pieced together or paired with something else to make a complete meal. As someone who likes to switch things up during the week, having components of a meal versus the same meal every day is my jam.
Ingredient prepping has also given me the space to be more creative with the seasonal ingredients I buy on a weekly basis. With this method, I always have healthy foods prepped in the fridge or freezer to enjoy, which has made my life so much easier.
Strawberry basil chia pudding — If strawberry basil ice cream exists, so can a chia pudding version of it! This is dessert but healthier 😋
Three green pesto pasta — Can be enjoyed as is or with additional protein
Sardine mediterranean salad — So delicious as a lunch wrap and with crackers as a snack
Nettle rose tea — I used it for an Arnold Palmer (half tea, half lemonade) and omg so refreshing!
Harissa butterbean stew — I had leftover stew from last week and froze some servings to enjoy this week. I had it for breakfast and lunch!

Triple Green Pesto Pasta

Sometime last year, I learned that pesto isn’t always made up of basil. Traditionally, yes, but it doesn’t HAVE to be. It can be made from almost any leafy green - arugula, kale, spinach, cilantro, etc (but don’t try romaine; that doesn’t sound like it would be good at all lol). And since learning that, I’ve been hooked on making arugula pesto and a kale cashew pesto (inspired by the kale pesto from Trader Joe’s); however, as part of my ingredient prep for the week, I wanted to switch things up a bit and make this Triple Green Pesto Pasta.
