This recipe is a riff on a French Yogurt Cake (one of my personal favorites). It’s a very simple recipe that uses yogurt to keep the cake tender and moist. It’s incredibly easy to make—the batter whisks together (no mixer needed!) with common pantry baking ingredients, olive oil, and Greek yogurt. Then, sprinkle on some fresh raspberries and sliced almonds, and bake! It’s the perfect recipe if you get a strong craving for cake but don’t have a lot of time or energy for baking.
I call it a snack cake because you can make it on a whim, it’s fairly casual without extensive decorations or frosting, and it’s perfect with an afternoon coffee or tea. You can dress it up with a dollop of whipped cream or drizzle a glaze or ganache over it if you’d like.
