I started writing this issue two weeks ago and decided it was too depressing: “It’s 5°F with a thick layer of iced-topped snow outside”. Well, I was watching house-hunting shows in the U.S. Virgin Islands to perk up.
But I thought you all would rather hear about spring….so here it is almost two weeks later, and this relentless winter is sending us another Nor’Easter!
Considering this weather, I thought waffles would be a good fit. So, I tried tofu waffles. They looked simple: just coat firm tofu with cornstarch and oil the waffle maker. The ingredients are similar to stir-frying it. Then, I topped the tofu waffle with berries, cherries, and a little maple syrup.

Maybe that’s where I went wrong. Maybe they are better with savory toppings. But, I did not care for this experiment. Nutrition is not everything.
This high-protein waffle made with whole grain flour topped with berry chia jam was MUCH better!
Our oven broke at the beginning of January (it was just fixed), giving me an opportunity to be more creative with my new small air fryer. I found that cookies come out wonderfully: crispy on the outside with soft, chewy centers. I baked them in small batches at 325˚F for about 12 minutes - of course, this will depend on the recipe.
