Weekly Meal Prep 7/13/26

One of my favorite, easy meals in the summer! These are also great to prep ahead the morning of to make meal time easier - just throw them on the grill and enjoy!

Veggie Kebabs:

  • 1 Zucchini

  • 1 Yellow Squash

  • 1 orange bell pepper

  • 1 red belle pepper

  • 1 yellow onion

  • 8 oz baby bella mushroom caps

For the marinated chicken:

  • 2.5 lb boneless skinless chicken breast

  • 3 tbsp olive oil

  • 2 tbsp dijon mustard

  • 2 tbsp Worcestershire sauce

  • 2 garlic cloves, grated or minced

  • 1 1/2 tsp salt

  • 1 tsp black pepper

  • 2 tsp Italian herb mix (or just your favorite dried herbs!)

  • 1 tbsp honey

  1. Add all of the marinade ingredients to a bowl and mix to combine.

  2. Set aside 1/4 cup of the marinade BEFORE adding the raw chicken. This can be used as a grill sauce to brush on the veggies!

  3. Cut the chicken breast into 2 inch cubes and put in a bowl. Pour the remaining marinade on top of the chicken and mix until each piece is coated in the marinade.

  4. Cover and put in the fridge to marinate for 2 hours or overnight.

  5. Before grilling, skewer each piece of chicken. I got 4 full sized skewers! I did this about 2 hours before I was ready to cook just to work ahead for meal time!

  6. Grill the veggies until desired doneness, brushing occasionally with the grill sauce.

  7. Grill the chicken kebabs for a few minutes on each side until they reach 165ºF internal temp.

  8. Serve the chicken and veggies with your choice of side - we just did white rice, but roasted potato wedges or a summer potato salad would go great with these!

I personally think green juice tastes so much better when it is fresh from the juicer, rather than juicing it ahead of time! These little packs are so helpful to have prepped ahead of time, so when I’m ready to juice, I can just dump one of these packs into the juicer and that’s it.

Each Pack:

  • 1/2 a green apple

  • 1/2 a lemon, peeled

  • 1/4 english cucumber

  • 2 ribs of celery

  • 1/2 inch piece of ginger

When you’re ready to juice, add this to your juicer along with a small handful of mint leaves and 1 cup of spinach!

I think this recipe has been included in almost every Substack post i’ve done so far haha. These are always on repeat in this house!

Ingredients:

  • 2 oranges, peeled

  • 1 lemon (optional: leave some of the rind on for additional health benefits like Vitamin C!)

  • 4 honey crisp apples

  • 3 inch piece of ginger (or more if you like a stronger kick!)

  • 4 small pieces of turmeric root

  • 1 tsp black pepper

How To:

  1. Peel the oranges and lemons if desired

  2. Remove cores from the apples

  3. Add everything to your juicer except the black pepper and juice!

  4. Stir the black pepper into the fresh juice

  5. Distribute into shot jars

  6. Store in the fridge for up to 5 days

  7. Shake well before drinking

This was kind of a “clean out the fridge” version, but made for a perfect summer lunch!

Ingredients:

  • 3 cups cooked and shredded chicken breast

  • 1/2 cup plain greek yogurt

  • 2 tbsp mayo

  • 1/2 tbsp dijon mustard

  • 1/2 jalapeno, seeded and diced

  • 1/4 cup diced red onion

  • 2 celery stalks, diced

  • 2 dill pickle spears, diced (I love Grillos pickles!)

  • 3 tbsp dill pickle juice from the jug

  • salt and pepper to taste (I like to taste the chicken salad before adding the salt, because the pickle juice and mayo may be enough for your taste preference!)

How To:

  1. Add everything to a bowl and mix until well combined!

  2. My favorite way to enjoy this chicken salad is on a brioche roll - the sweetness of the roll is the perfect balance for the savory chicken salad!

Honorable mention for these cheesy jalapeno english muffins.

I am lost in the baking world but would love to learn how to make some of my own bread at home! I attempted to make english muffins for the first time and sadly they were… terrible hahaha.

I did have to use gluten free flour, because that’s all I had on hand at the time. I also think my water temperature was not warm enough to activate the dry yeast!

Even though this didn't turn out, it felt good to try something new! I’m excited to try more bread recipes so please share all your tips if you have them!
