This simple lunch is one we have on repeat!

Ingredients:

  • 2 cups cooked white rice

  • 2 bell peppers, chopped

  • 1 yellow onion, chopped

  • 2 lb ground turkey

  • 1 tbsp olive oil

  • 2 tbsp taco seasoning

  • Optional toppings: shredded cheese, salsa verde, fresh lime

How To:

  1. Heat a pan on medium - high heat and add 1/2 tbsp olive oil

  2. Add your ground turkey and season with the taco seasoning. Cook until browned, then remove from the pan and set aside.

  3. In the same pan you used for the ground turkey, add the remaining olive oil and the chopped peppers and onions. Saute until cooked though (adding water occasionally to help steam if needed!).

  4. Assemble the bowls: starting with 1/2 cup of rice, then 1/2 cup of the cooked peppers and onions, 5 oz ground turkey and shredded cheese.

    *note: if you are meal prepping this for a later time, make sure all of the ingredients are fully cooled before assembling! Otherwise, assemble everything while hot and serve immediately

This method is one of my favorite cooking hacks, especially during a meal prep session! You can set it and forget it while the rice cooks, hands off - perfect for if you don’t have a rice cooker! It’s also great for making larger batches of rice to use for several different meals like I did in this prep. All the details of how I make this oven rice are in this reel!

Ingredients:

  • 1 cup greek yogurt

  • 2 tbsp mayo

  • 1 jalapeno (optional to leave the seeds in if you like it spicy!)

  • 1 tbsp ranch dressing mix powder

  • juice of half a lime

How to:

  1. Add all the ingredients to a small food processor and blend until smooth

This might be a new favorite recipe! Smoky, flavorful and a little spicy.

Ingredients:

  • 3 small tomatillos

  • 1/2 yellow onion

  • 1 poblano, seeds removed

  • 1 jalapeno, seeds removed

  • 2 garlic cloves

  • juice of 1 lime

  • salt and pepper to taste

How to:

  1. Coat the vegetables in a light spray of oil

  2. Grill on high heat for 1—15 minuted or until everything is starting to get a char

  3. Remove from the grill and allow to cool slightly

  4. Add everything to a food processor along with the fresh garlic cloves, salt, pepper and lime juice

  5. Pulse until everything is well combined, adding more salt, pepper or lime juice if needed for flavor.

Ingredients:

  • 2 1/2 cups quick oats

  • 2 cups sliced almonds

  • 1/4 cup hemp seeds

  • 1/4 cup chia seeds

  • 1 tsp salt

  • 1 tsp cinnamon

  • 1/3 cup coconut or avocado oil

  • 1/3 cup honey

How To:

  1. Preheat oven to 325ºF

  2. Add all the dry ingredients to a large bowl and mix until combined.

  3. Add the oil and honey, then mix until everything is well combined.

  4. Line a large baking sheet with parchment paper, then spread the granola mix into an even layer.

  5. Bake for 20-25 minutes, or until the edges are starting to brown

  6. Remove from the oven and allow to cool completely before stirring or moving!

  7. Once cooled, it should break off into chunks. Store in an air tight container.
