It’s Tuesday, and at our house, that means it’s taco night. Since it’s Iris’s world and we are just living in it, I usually make old school ground beef tacos because that’s her favorite. Occasionally, I will change it up (whether or not she eats it is a different story). Ryan and I love fish tacos, and also these Grilled Shrimp Tacos with Mango and Avocado Salsa that I am sharing on today’s episode of It’s Not Complicated.
When Ryan and I first met, we were filming my travel show, Beach Bites. He was one of my producers and I had a crush on him pretty much instantly. Our first destination was Punta Mita, I remember when we wrapped on the first day of filming, we all went for drinks at the hotel beach bar. Slowly everyone went in different directions, leaving Ryan and I to watch the sunset on our own. We ate so many tacos while we were there, and this recipe really makes me think about that trip.
You’ll see the spice rub that I use on the shrimp is similar to rubs I’ve used in the past — it’s kind of my go-to, whether I’m making chicken, steak, or seafood. The mango gives sweetness, the avocado adds a nice creamy texture, and the extra step of pickling the cabbage slaw takes it to the next level. The salsa is excellent on grilled chicken, pork chops, or salmon as well.
