You want to master the fundamentals of cooking so you can understand how to use different ingredients, techniques, and flavors to be able to make your own recipes! Next up in the “Back to Basics” series - How to Bake a Delicious Sweet Potato
Is it bad that I am confidently team sweet potato over a regular potato? Don’t hate me.
I love how sweet and flavorful they can be, but also how versatile they can be in cooking. Being able to confidently bake a sweet potato AND knowing how to make a delicious one, is key for living a happy and healthy life!
These baked sweet potato halves are meant to be either enjoyed in the moment OR meal prepped for the rest of the week. Imagine not needing to prep a carb for lunch or dinner — a dream.
Stuffed sweet potato boats -
Mashed on the side of a protein for dinner
Chopped up and added into a salad/bowl
Added on the side of breakfast for a delicious source of carb/fiber
Once you master this basic cooking skill, you’ll have the foundation for endless meals.
I’ll walk you through everything below, so let’s get to it!
Yields: 4
Portion: 1 sweet potato
Prep time: 10 minutes
Total time: 1 hour 10 minutes
This recipe is gluten free and vegetarian. This recipe can be easily made dairy free without the addition of the cheese.
What you’re going to need:
2 sweet potatoes, halved down vertically
2 tbsp extra virgin olive oil or avocado oil
Salt, black pepper, garlic powder, and paprika (you can use smoked for extra flavor)
1/4 cup sharp cheddar cheese
How you’re going to make it:
Preheat the oven: preheat the oven to 425. Prep the sweet potato and add to a mixing bowl. Coat potatoes with oil and season well. Make sure all sweet potato halves are evenly seasoned.
Bake potatoes: Line a sheet pan with parchment paper. For each sweet potato half, sprinkle 1 tbsp of cheese onto the pan, roughly the size of the sweet potato. Place each sweet potato half cut-side down (skin-side up) directly over the cheese, making sure the cheese covers the entire surface of the sweet potato. Repeat for each sweet potato half. Bake in the oven for 1 hour or until the sweet potato skin is soft and tender.
Rest & Serve: gently remove sweet potato halves from the oven and allow them to cook for 10 minutes. Gently lift each sweet potato off of the sheet pan. You can choose to serve immediately or place them into Tupperware to enjoy later. You’re going to love them!
