Kinda chic to make cheesecake without touching the oven

I love cheesecake. I also love yogurt. I also also sometimes just really don’t feel like turning on the oven. (Especially towards the end of summer when it’s still so hot and humid outside).

This no-bake yogurt cheesecake is a perfect solution. It’s creamy, fluffy, and such a fun way to enjoy yogurt. It’s also so easy to use as a base and switch up the flavor profile.

So grab some molds and your favorite yogurt or skyr, and give it a whirl.

  • Gelatin blooming is a finely-tuned art, and sometimes I’ll use a precision kitchen scale to get the ratios exactly right to make it easier on myself. When blooming your gelatin, the 5 minute minimum guidance is pretty spot on to what I’ve experienced. You want your gelatin to fully absorb the water so it’ll dissolve smoothly, and I’ve found it takes at least 5 minutes.

  • Sprinkling the gelatin evenly into the water is key to avoiding dry pockets.

  • When you add your melted gelatin to your yogurt mixture, I recommend slowly stirring it in phases.

  • While you can use whatever you have around for your mold, silicon or aluminum molds like this are some of the easiest to work with. You can also scale the recipe way up and make a larger version in this.
