Here’s the thing, if I really want a fried rice, then I’ll have the dang fried rice. I would never want to live in a world without good fried rice.
Sometimes, though, I’ll want fried rice so often that I had to find ways to change it up for variety’s sake. And that was how I started trying out cauliflower rice.
You can of course use regular rice in this recipe, but if you’re looking for some extra plant variety, I recommend ricing your own cauliflower in a food processor. It’s actually super easy to do and also weirdly satisfying. Please don’t ask me to elaborate on why because I simply cannot.
I love this recipe because it’s so versatile. You can easily swap the tofu for whatever protein you like best. You can use whatever veggies you have in your fridge. And you can add your favorite toppings to play with the flavor. I can’t wait for you to try it!

If you prefer extra crispy tofu, you can set your oven to 400-425°F.
Add your cornstarch to your tofu after you coat in the marinade and the marinade is absorbed.
Please make sure your tofu pieces don’t touch when baking, or they’ll stick together.
To make your cauliflower rice, pule your food processor in short bursts.
