This is one of my go-to recipes when I want something full of flavour, but free of fuss. It’s quick, simple and makes hardly any washing up. Perfect for a busy weeknight or feeding hungry kids in the school holidays. And I know we normally cook pasta in boiling water, then drain it and add to a sauce, but trust me, cooking the pasta in the sauce just takes it to the next level.
This is the definition of “the oven does the hard work”. Juicy chicken and crispy lemon potatoes roast together in one pan, while you make a quick, zingy tzatziki to dollop on top. Or buy the tzatziki...I won’t tell!
Is there anything better than a one-pan supper on a busy weeknight? Reader, there is not. This takes just five minutes to assemble: a tiny bit of chopping, then everything goes into one tray. The fennel, red peppers, and tomatoes absolutely sing together as the tomatoes burst in the oven into a juicy, gorgeous sauce. Any leftovers make the ultimate next-day lunch.
