Panko crust might sound like it involves a bit of effort, but this is honestly one of the easiest ways I know to make salmon feel a little bit special: a quick mix, a few minutes in the oven and you get the most gorgeously golden, crunchy crust with soft, succulent salmon underneath.
I love it served over these caponata-style, melt-in-your-mouth courgettes and tomatoes. Healthy, full of flavour and on the table in about 30 minutes. Exactly the kind of dinner I want on a busy weeknight.
