This is a gorgeously low effort summer meal plan: light, fresh and delicious, with recipes that are simple enough for a weeknight but special enough to look forward to. I love putting these together and really hope they help make the weeks a little easier with one less thing to think about.

1. Summer Garden Pasta
This is a gorgeous no-cook pasta recipe. My Mum used to make a similar version when I was younger so it really takes me back. Prep time is only 10 minutes but you need to plan ahead a little and let the tomatoes sit for a few hours for best results.
2. Easy Salmon Traybake With Golden Potatoes, Asparagus And Pesto
This is so easy and so good! Nothing complicated, just a few ingredients but completely delicious. A family favourite.
3. Hot Honey Halloumi Grain Bowl
Golden hot honey halloumi served over herby giant couscous with crunchy cucumber, quick pink pickled onions and lemony yoghurt. Plus, my simple halloumi hack for perfectly golden, crispy halloumi every time
4. Sticky Honey Paprika Chicken with Creamy Corn Salad
This really couldn’t be simpler. The oven does the heavy lifting while you whip up the corn salad. Full of flavour and perfectly balanced between sweet and sticky, with a little smokiness and gentle heat.
5. Steak and Green Bean Salad with Yogurt Caesar Dressing
I like a hearty salad if I’m going to have a salad. A few limp lettuce leaves isn’t going to work for me. I sometimes make this even heartier with added grains too.
