I decided to make a red velvet cake for no reason. Just… because.
No birthday, no guests, not even a dinner plan. I baked it mid-afternoon while waiting for a cookie tray to chill. Covered it in toasted coconut and perched it on the cake stand my mom gave me a few years ago. It felt completely unnecessary and perfectly right.
That’s been the energy in the kitchen lately, making things not because I have to, but because I want to. Marble shortbreads. Nutella buttercream sandwiches. Butter cookies that finally held their shape. And in the center of it all: this coconut-crusted red velvet cake, radiating main character energy.
