I’ve been thinking about something since writing those last two posts.
For me, quality isn’t a concept. It’s just dinner. It’s olive oil pooling in the center of a plate of pasta. It’s cream in the polenta. It’s sausage with mustard instead of something “lighter.” It’s wine poured without measuring.
And I’ve noticed something else - when the ingredients are good, the portions kind of take care of themselves.
A bowl of ricotta gnocchi made with real ricotta doesn’t need to be huge. Polenta with butter and parmesan is satisfying in a way that doesn’t leave you wandering back into the kitchen later. A properly cooked steak feels complete. Quality changes the way you eat.
If I’m going to make pasta, I want it to be good. Sauce that actually clings. Meatballs are browned properly. Parmesan that tastes sharp and nutty, not like dust.
