People always ask what my favourite pasta is.
It depends. Is it raining? Am I hungover? Is it tomato season?

Pesto on pomodoro isn’t trying to reinvent anything. It’s two classics sharing the same plate. Nobody is trying to outshine anybody. The pomodoro doesn’t need to taste like pesto. The pesto doesn’t need to cover the pomodoro. They stay exactly what they are. That’s why they work.
I think Italian cooking understands this really well.
Every ingredient has a job. It’s not a solo show.
The pomodoro brings sweetness and acidity.
The pesto brings freshness, richness and herbs.
The parmigiano ties everything together.
Not one ingredient is carrying the whole dish.
