If I ever start a gut-friendly drinks business, this is the first flavor going on the menu!

This Pineapple Coconut Soda is incredible. Bright, tropical, naturally sweet, wildly fizzy, and literally the best pineapple soda I’ve ever had. I shared it with my boyfriend and my best friend while she was visiting, and both of them said this was their favorite soda flavor I’ve made so far. And, I completely agree!

What surprised me most was the carbonation. I added no extra sugar to the soda itself, and the fizz was out of this world. After making so many different batches, one thing I’ve noticed is that fresh fruit tends to give me the strongest carbonation compared with tea-based sodas or fruit syrups, like the one I use for my Cherry Vanilla Cola.

Pineapple is especially fun because it already contains plenty of natural sugar for the ginger bug to work with. And because the pineapple flavor is so bold and naturally sweet, this is also one of the first sodas I’ve made where I genuinely cannot taste the ginger at all. You just get pineapple, coconut, and that crisp natural carbonation.

It tastes like a tropical soda you’d actually want to keep stocked in the fridge. And I love that it has probiotic benefits.

Day 1 (left) vs Day 2(right)

The recipe is below, and it’s also included in my Comprehensive Ginger Bug Guide, which is now available on Amazon. YAY. 🥹

I’m especially excited about having a physical version available because now you can keep a tangible homemade soda-making guide right in the kitchen. Inside, I share the full ginger bug process, troubleshooting tips, recipes, and checklists that help you understand what to look for at each stage so you can really perfect the process.

And if you make only one of my fermented sodas, I’m strongly suggesting this one.
