Some of my favorite pizzas are just tomato and that’s it. No cheese, nothing fancy and nothing to hide behind. The marinara at Pizzeria Bianco, an iconic showcase of simplicity or South Philly style Tomato Pie from Sarcone’s- the stuff of legends.
This one isn't trying to out-do the others. It's speaking its own language: ripe summer tomatoes plus well-seasoned canned ones, two tomatoes dancing together so the sauce reads deeper than either could alone. A proper symphony.
