Everywhere you look online you’ll see a chicken caesar something- whether it’s a wrap or a salad it’s safe to say this is the “IT” girl right now and has been for quite some time. She’s timeless and doesn’t go out of style.
As someone who grew up in the suburbs- Chicken Caesar Salad was the gateway drug for people to start stepping out of their comfort zone. They were eating anchovies without knowing it. Like when Mom’s hide vegetables in the Mac n cheese, you had no idea. Everyone always wonders why they loved this sauce so much… uhm it’s the anchovies.

Now who doesn't love a chicken cutlet? This now Italian American icon is good with anything really. Chicken Parm’s, cold out of the fridge, on top of pasta & salads. You get the point. I’m not reinventing the wheel here I’m simply just a fan and this is my version of the dance.

Which is funny because it’s became the poster child for Italian restaurants here in America. This salad was actually invented in Tijuana, Mexico. Legend says the creator was an Italian immigrant - Caesar Cardini. He was running the restaurant named Caesar’s and needed something to whip up for his guest and thus landing on this salad. While the recipe he started with was different. Stories have it that his brother Alex was the one who added anchovies. In turn creating this salad we all know and love today.
While it may have been invented by an Italian does that make it Italian if it was coined in Mexico? The debate will go on forever.
