Being from the south, sometimes all i crave is soul food. But as a fitness junkie, I cannot come close to eating that as much I would love to. Sometimes i find myself drooling over the thought of the holidays and how food is such a centerpiece of the mood.
This recipe includes baked sweet potatoes (yams, as i’d like to see it), Collard greens (not exactly how my grandma made it, but similar ha), ground beef (smothered beef & gravy hehe), pickled onions and pico (let’s think of this as the mac n cheese).
Ingredients:
1 large sweet potato
Olive oil
Garlic powder
Onion powder
Salt
Instructions:
Preheat oven to 400°F.
Slice the sweet potato into rounds or wedges (your call on thickness….thinner cooks faster and gets crispier edges).
Coat lightly in olive oil first.
Season with garlic powder, onion powder, and salt.
Lay in a single layer on a baking sheet.
Bake for 30 minutes, flipping halfway through, until fork-tender with slightly caramelized edges.
Ingredients:
2 bunches (stacks) collard greens, washed and chopped
1 tbsp minced garlic
Sliced onion
2 cups chicken broth
1 cup bone broth
Garlic powder
Onion powder
Paprika
Salt, to taste
Instructions:
Sauté the sliced onions and minced garlic for 2–3 minutes, until fragrant.
Pour in the chicken broth and bone broth. Let simmer for 5–10 minutes to build flavor.
Add the collard greens and let cook down for 15–20 minutes.
Season well with garlic powder, onion powder, paprika, and a small amount of salt.
Let cook for another 5 minutes, then they’re done.
Bone broth adds richness and body, but chicken broth alone works just as well if that’s what you have on hand……..
Ingredients:
Ground beef
Olive oil (just enough to coat the pan)
Garlic powder
Onion powder
Salt
Taco seasoning (optional)
A small amount of tomato paste
Water, to thin the tomato paste
Instructions:
Lightly oil the pan with olive oil.
Add the ground beef and season with garlic powder, onion powder, and salt as it starts to brown.
Stir in the taco seasoning.
Add a small drop of tomato paste along with a bit of water to loosen it, mixing it through the meat.
Cook until the beef is fully done, then remove from heat.
Side with your favorite pico combo and pickle onions and BOOM! 10/10 bowl for me.
