I’m convinced any dinner that ends with someone scraping the pan deserves a permanent spot in the rotation. This one feels fancy enough for company, easy enough for a Tuesday, and creamy enough to make everyone forget they had other dinner requests five minutes earlier.

Ingredients

  • 1 lb. pasta (your choice of shape)

  • 2 tablespoons butter

  • ½ onion, finely diced

  • 1½ lbs. chicken breast, cut into cubes

  • 1 teaspoon salt

  • 1 teaspoon pepper

  • 4 garlic cloves, finely minced

  • 1½ cups chicken broth

  • 2 cups heavy cream

  • ⅔ cup sun-dried tomatoes (in oil), chopped

  • ¼–½ teaspoon red pepper flakes

  • 1 cup fresh baby spinach

  • 4 ounces Parmesan cheese, grated

  • 5–6 fresh basil leaves

Eggplant

  • 10 oz Chinese eggplant (about 2 small), chopped into bite-size pieces

  • 1 teaspoon salt

  • 1 tablespoon cornstarch
