Pandan madeleines may not be traditional Easter fare here in the UK. But these pretty little shells, with the gently floral and slightly grassy flavour from the pandan will make a perfectly light addition to any Easter banquet. I’ve even added lemongrass for a fresh, citrussy note. Or perhaps they might make a nice alternative to chocolate eggs with your mid morning cup of tea.
