I only realized after my first sip that this is essentially pear-thyme lemonade, made with soda water instead of still. It was not my intention to make a glorified lemonade, but I’m very happy I did.

Pear, Lemon & Thyme Syrup

Ingredients:

  • 1 Bosc pear

  • 2 cups water

  • 1/3 cup honey

  • 2 strips lemon peel

  • A few sprigs fresh thyme

Directions:

  1. Cut the pear in half and use a melon baller to remove the seedy core.

  2. In a small pot over medium heat, combine the water and honey. Once the honey has dissolved, add the halved pear and gently cook until a knife can easily pierce through, about 10 minutes.

  3. Remove the pear and simmer the mixture to reduce by about one-third. Let cool slightly, then pour into a lidded jar or container. Add the pear back in, along with the lemon peel and a few sprigs of thyme. Let steep in the fridge overnight.

  4. Remove the pear, lemon peel, and thyme the next day. Keep refrigerated.

    Note: You now have a bonus poached pear! Enjoy it in a yogurt bowl for breakfast in the morning.

Pear Lemon & Thyme Fizz

Ingredients:

  • 2 oz pear, lemon & thyme syrup

  • 1 oz freshly squeezed lemon juice

  • Soda water

  • Lemon wheel and thyme ice, for garnish

Directions:

  1. Fill a glass with ice (bonus points if you freeze thyme or lemon into your ice). Add the syrup and lemon juice, then top with soda water.

Note: This is not a true simple syrup, since it is not a 1:1 ratio of sugar and water. It is much more diluted, but depending on how far you reduce it, it will be more or less sweet. Adjust to your taste.
