There are few more perfect dinner party foods than roast chicken and potatoes. It checks every box: crowd-pleasing, a little special, deeply comforting, and importantly, fairly simple to pull off. For many of us, the hardest part is not making them, but figuring out the timing so they land on the table nice and hot.
One of my biggest pieces of hosting advice is to let go of the idea that every dish needs to be served perfectly piping hot. That being said, I think it becomes much more manageable when you focus on just a few dishes that really benefit from being served warm. These recipes are written with make-ahead flexibility in mind, and below I share the timing approach I like to use so both dishes are warm when you are ready to serve, without keeping you stuck in the kitchen while everyone else is gathered around the table.
