No pasa muy a menudo que un postre quede así de bueno en el primer intento. Me sorprendió tanto lo mucho que me gustaron estos mini cobblers de ciruela que empecé a pensar que tal vez los dioses de la repostería decidieron sonreírme porque ayer hice varias buenas obras, jajaja. Porque no puede ser coincidencia que me hayan quedado TAN bien la primera vez que los hago.
Las ciruelas no suelen ser la primera fruta que escogería para preparar este tipo de postre, pero terminé con una abundancia de ellas después de que mi shopper de Instacart me trajera una bolsa enorme de ciruelas normales en vez de la bolsita de cherry-plums que Augusto realmente quería. ¡Y qué feliz accidente terminó siendo!
Las ciruelas tienen una acidez deliciosa que hace que el contraste con la cobertura dulce y mantequillosa del cobbler y el helado de vainilla frío sea aún más especial. Al hornearse, se ablandan hasta quedar con una textura deliciosa, casi como una mermelada, y ese poquito de maicena ayuda a espesar sus jugos justo lo necesario. ¡Y el color! Quedan de un rosado rojizo espectacular que casi parece demasiado bonito para haber sido un accidente.
No hace falta decir que estoy MUY emocionada de compartirles esta receta.
It’s not often that a baked dessert turns out this good on the very first try. I was so surprised by how much I loved these mini cobblers that I started wondering if the baking gods had decided to smile upon me because I did several good deeds yesterday, haha. Because surely it can’t be a coincidence that I absolutely nailed these on the first try.
Plums aren’t usually the first fruit I’d reach for when making this kind of dessert, but I happened to have an abundance of them after my Instacart shopper brought me a huge bag of regular plums instead of the small bag of cherry plums Augusto actually wanted. And what a happy little accident that turned out to be!
Plums have this wonderful tartness that makes the contrast with the sweet, buttery cobbler topping and cold vanilla ice cream extra special. As they bake, they soften into the most delicious, jammy consistency, and the little bit of cornstarch thickens all those beautiful juices just enough. And the color! They turn this gorgeous pinkish-red that looks almost too pretty to be accidental.
Needless to say, I’m VERY excited to share this one with you guys.
