Arugula & Basil Pesto

Now, let’s make some pesto!

Makes about ¾ cup (12 tablespoons)

Ingredients

  • 1½ cups packed fresh arugula

  • ½ cup packed fresh basil leaves

  • 1 small garlic clove, finely chopped

  • ⅓ cup pine nuts

  • ½ cup freshly grated Parmesan cheese

  • ½ cup extra-virgin olive oil, plus more as needed

  • 1 tablespoon fresh lemon juice

  • ½ teaspoon finely grated lemon zest

  • ½ teaspoon salt, or to taste

  • Freshly ground black pepper, to taste

Method

  1. Add the pine nuts to a dry skillet over medium-low heat. Toast, stirring frequently, until lightly golden and fragrant. Transfer to a plate and let cool completely.

  2. Add the toasted pine nuts, Parmesan, lemon juice, garlic, salt, and black pepper to a food processor. Pulse until finely chopped.

  3. Add the arugula, basil, and lemon zest. Pulse again until finely chopped, scraping down the sides of the bowl as needed.

  4. With the food processor running, slowly stream in the olive oil and process until the pesto reaches your desired consistency.

  5. Taste and adjust with additional salt, black pepper, or lemon juice as needed.

Pesto de Rúgula y Albahaca

Rinde aproximadamente ¾ taza (12 cucharadas)

Ingredientes

  • 1½ tazas de rúgula fresca, bien compactada

  • ½ taza de hojas de albahaca fresca, bien compactadas

  • 1 diente de ajo pequeño, finamente picado

  • ⅓ taza de piñones

  • ½ taza de queso parmesano recién rallado

  • ½ taza de aceite de oliva extra virgen, y un poco más si es necesario

  • 1 cucharada de jugo de limón fresco

  • ½ cucharadita de ralladura fina de limón

  • ½ cucharadita de sal, o al gusto

  • Pimienta negra recién molida, al gusto

Preparación

  1. Agrega los piñones a una sartén seca a fuego medio-bajo. Tuéstalos, revolviendo frecuentemente, hasta que estén ligeramente dorados y fragantes. Pásalos a un plato y déjalos enfriar por completo.

  2. Agrega los piñones tostados, el parmesano, el jugo de limón, el ajo, la sal y la pimienta negra a un procesador de alimentos. Pulsa hasta que todo esté finamente picado.

  3. Agrega la rúgula, la albahaca y la ralladura de limón. Pulsa nuevamente hasta que estén finamente picadas, raspando los lados del procesador según sea necesario.

  4. Con el procesador encendido, agrega lentamente el aceite de oliva hasta obtener la consistencia deseada. Si prefieres un pesto más ligero, agrega un poco más de aceite de oliva.

  5. Prueba y ajusta con más sal, pimienta negra o jugo de limón si es necesario.
