Huevos en cocotte con jamón, queso y chives (English below)
Hay desayunos que se sienten mucho más especiales de lo que realmente cuestan hacer, y este es uno de ellos. Cremoso, reconfortante y listo en pocos minutos, es perfecto para una mañana tranquila de fin de semana o para consentirte cualquier día. No olvides servirlo con unas buenas tostadas para aprovechar hasta la última gota de la yema. Mis cocottes los adoro, los consigues aquí.

Ingredientes
1 huevo
3 cucharadas de crema de leche (heavy cream)
2 lonjas pequeñas de jamón de pavo o cerdo, picadas o rasgadas
1 lonja de queso de tu preferencia (yo usé Muenster) o 2 cucharadas de queso rallado (Gruyère, Emmental, Comté o una mezcla de mozzarella y cheddar blanco)
1 cucharadita de mantequilla
Sal marina en hojuelas
Chives frescos, finamente picados
Pan tostado, para servir
Preparación
Precalienta el horno a 190°C (375°F). Unta una cocotte o ramekin con la mantequilla.
A mí me gusta dorar el jamón en una sartén caliente con un tris de mantequilla, pero es completamente opcional.
Coloca el jamón en el fondo de la cocotte. Vierte la crema de leche y agrega el queso.
Casca el huevo encima. Añade una pizca de sal, teniendo en cuenta que el jamón y el queso ya aportan bastante sal.
Coloca la cocotte dentro de una bandeja para horno y vierte agua hirviendo hasta cubrir aproximadamente la mitad de la altura del recipiente (baño María).
Hornea durante 12-14 minutos, o hasta que la clara esté cocida y la yema permanezca cremosa.
Deja reposar durante 1 minuto. Termina con abundantes chives picados y sirve de inmediato con pan tostado.
Un par de detalles que creo que la mejoran
Mezclar ¼ de cucharadita de mostaza Dijon con la crema de leche antes de armar la receta queda delicioso con el jamón y el queso. Es completamente opcional, pero lo recomiendo mucho.
También puedes reemplazar el jamón por tocineta crujiente o champiñones salteados, y usar el queso que más te guste siempre que funda bien.

Ham & Cheese Eggs en Cocotte
Serves: 1
Ingredients
1 large egg
3 tablespoons heavy cream
2 small slices of ham, chopped or torn into pieces
1 slice of your favorite cheese (I used Muenster), or 2 tablespoons grated cheese (Gruyère, Emmental, Comté, or a mix of mozzarella and white cheddar)
1 teaspoon butter
Flaky sea salt
Fresh chives, finely chopped
Toasted bread, for serving
Instructions
Preheat the oven to 375°F (190°C). Butter a small cocotte or ramekin.
I like to lightly brown the ham in a hot skillet with a tiny bit of butter first, but it's completely optional.
Place the ham in the bottom of the ramekin. Pour in the heavy cream and add the cheese.
Crack the egg on top. Season with a small pinch of salt, keeping in mind that the ham and cheese already add plenty of salt.
Place the ramekin inside a baking dish and carefully pour boiling water into the dish until it reaches about halfway up the sides of the ramekin (a water bath).
Bake for 12-14 minutes, or until the egg white is set and the yolk remains creamy.
Let it rest for 1 minute. Finish with plenty of freshly chopped chives and serve immediately with toasted bread.
A couple of tips
Stir ¼ teaspoon Dijon mustard into the heavy cream before assembling. It pairs beautifully with the ham and cheese and adds a subtle tang. It’s completely optional, but highly recommended.
Feel free to substitute the ham with crispy bacon or sautéed mushrooms, or use any melting cheese you enjoy. This recipe is incredibly versatile.
