My husband said this was the best ice cream he has ever eaten. His favourite ice cream flavour is vanilla which is admittedly a questionable human characteristic (surely pistachio, dark chocolate, hazelnut, mint choc chip are better?) but I will take the compliment and will add that I was very pleased with this. The homemade shortbread really takes it to the next level and it’s rather lovely to serve it with a wedge of shortbread on the side as a bit more of an elevated pudding or fancy afternoon snack. Shortbread is not difficult to make but if you can’t be bothered to make it I am sure some walkers shortbread crumbled through would be equally tasty.
I served this as a pudding for friends alongside my pistachio stracciatella which I highly recommend (it may be my favourite ice cream EVER). If you have time to make both they are a very good combo. The recipe is here.
