Happy Saturday! I hope you’re having a relaxing day. Today we’ll be working in the backyard and I’ll be making the menu plan & shopping list for the week, which helps me so much in keeping me happy on the SCD and our meals varied and delicious! Here’s the magnetic menu I use on our refrigerator, which I found on Amazon along with chalk markers:

Today I’ll be sharing a new recipe for Salmon with Orange-Kiwi Salsa, as well as a few favorite dinners I enjoyed recently and more about our trip to the Cincinnati area and specifically about a fun store there called Jungle Jim’s!

When we were in the Midwest recently, we got to visit one of the largest, most quirky grocery stores! Jungle Jim’s, in the Cincinnati area, was recommended to us by a couple of different people, and it was quite something…! It is over four acres large and filled with unique and hard-to-find groceries from all over the world. It is so big, in fact, that I finally had to leave to rest in the car while everyone finished up shopping. (But I accidentally exited the wrong door and couldn’t find our car for a while!)

You can imagine there were a variety of foods that an SCDer might be able to eat. Here are a few types of honey that I snapped pictures of (though I haven’t researched some of them for SCD legality yet):

And I picked up a box of Nature Nate’s Honey Co. individually wrapped servings of honey, which I enjoyed a couple of times on the trip -

They also had loose leaf black teas from all over the world, plus other foods an SCDer might be able to enjoy. I definitely recommend visiting Jungle Jim’s if you are in the Cincinnati area!

And on another note, in the airplane on the way to the Midwest I enjoyed black tea for my beverage -

And I had brought along some peppermint tea bags so I just asked for hot water on our evening flight home and added a peppermint tea bag -

I’m enjoying hot tea more and more on trips as an SCD-safe beverage!

The weather has been good for barbecuing and eating on the back patio. So we barbequed some hamburger patties on the grill and served with grilled onions and mushrooms with garlic, sliced tomatoes, lettuce, and some steamed veggies on the side. (I use Kirkland brand frozen beef patties from Costco.)

Another meal on the patio: I made a nacho bar for the family and on my plate I had seasoned pulled pork from the freezer that I browned in a pan with avocado oil, grated cheese, sliced olives, and diced avocado, with some frozen/baked brussels sprouts from Trader Joe’s on the side.

Breakfast for Dinner (or as we call it around here, BFD!) was easy to put together on a busy day. Sometimes BFD can surprise me by being harder to make IF I make things like chaffles, waffles, or pancakes along with bacon and fruit, etc. But this BFD meal was actually EASY - I made scrambled eggs for the main dish, adding some hatch chiles, colby jack cheese, and a spoonful of SCD yogurt to the eggs before scrambling. Then I served it with bacon and fruit.

Enjoy this new recipe! It is a great way to make salmon extra yummy. (And fish is so quick to throw together, plus so healthy!) You could roast some veggies in the oven at the same time it cooks, making a simple well-rounded meal.
