Well, May is definitely shaping up to be “Maycember” in my life right now for sure, being just about as busy as December with all of the school recitals, family visits, and our oldest son graduating from high school! My parents will be out here soon from Texas for his graduation, and now that my dad is on the SCD (read more below…!) I’m thinking about what to make ahead and freeze for his visit! So far, here’s what I’ve made:
Mom’s Meatloaf into individual meatloaves, cooked, and frozen for later
Blueberry Coconut Streudel Muffins (recipe for members below)
Cinnamon Coffee Cake Muffins from Lucy’s Specific Carbohydrate Diet Cookbook. I always like to double the recipe for the cinnamon/butter sauce - so yummy! (It looks like there are a limited number of these cookbooks, used, on Amazon…check for it!)
This week I think I’ll make some pulled pork to freeze and share for my parents’ visit plus for many meals in the future. And I’ll keep you updated on what else I cook up next time!
This week my husband and I met friends at Ted’s Montana Grill and I was served a beautiful plate of a plain ground beef patty, grilled onions, tomato, lettuce, with plain steamed broccoli and carrots on the side. I added salt & pepper. It was delicious!
When I go out to restaurants I explain to the waiter before I order that I’m on a special diet for my health, similar to an allergy, so I need my food plain with no marinades or seasonings.
This week I whipped up Taco Soup (recipe below for members), a definite family favorite. It’s so yummy and also so easy to put together, either in the crock pot or a half-hour or so before dinner. I made it even easier this time by using frozen diced bell peppers from Trader Joe’s. These are so great to have on hand in the freezer!
Well, guess what?! My husband is now on the SCD! He’s been having gut issues with no diagnosis, going on for quite a while actually, so we thought... “We know the SCD works, and we know how to do it, so we should probably give it a go!”
The first week I kind of ran myself ragged making some basic stuff, and things are smoothing out now. We’ll be with Erin in a short time and he can eat her food while we’re there, and I’m getting things in place. I remember that it took us a few weeks to get it right when Erin started the SCD back in 2001. He’s already seeming to do better after being on the diet for two weeks, so that’s great!
I thought I’d just give you some info on what we’re doing so far!
The first thing I did was make some Peanut Butter Cookies to go in the freezer! He loves a sweet treat.
We also bought two bags of grapes (testing a grape in each to make sure they were sweet), soaked them to get ‘em clean, then pulled them all off onto towels. We froze the dry grapes in sandwich bags, which makes the best, coldest, sweetest dessert!
I made a recipe of Garlic Pizza Crusts, making six personal size crusts out of the recipe. (Recipe below for members.)
A recipe of Crunchy Honey Granola made a nice big bag of breakfast goodness that he can eat topped with fruit and nut milk. Of course, he also likes eggs and bacon. (Recipe below for members.)
I made a big recipe of Mom’s Meatloaf and froze it in 4 smaller loaf pans.
I bought a big package of Costco ground beef to make Mini Meatballs, which he loves. (Recipe below for members.)
We went to Whole Foods to see what he could eat, and we found that the rotisserie chickens should be legal! We bought one!
So, I’m “in the club” now, back to being a for-real SCD support person.
