Whenever I find a forgotten jar of jam in the fridge, my mind goes straight to crostata. It is the undisputed champion of the Italian breakfast table, but I like to make mine feel a bit more intentional. To elevate it from a simple pantry staple to something special, I tuck a layer of frangipane cream right above the jam. It creates a soft, almond-scented cushion that feels both rustic and deeply elegant. A few slivered almonds on top, and suddenly your tea time feels very put-together.

This recipe demonstrates how to achieve a professional, friable texture in gluten-free pastry, a feat often difficult due to the absence of gluten’s structural network. By utilizing a high-quality gluten-free Pasta Frolla (Shortcrust Pastry) as the foundation, we create a stable vessel for the moist, almond-rich frangipane and the bright acidity of the apricot jam.

I tried to approximate the quantities as closely as possible using cups and tablespoons, but I recommend using a scale, especially when baking sweet treats.

This specific formulation relies on a precise fat-to-flour ratio to ensure the crust remains “short” and delicate rather than gummy.
