Once you discover a galette, the pie game blows wide open. It’s not simply the act of forming a “pie” right on your baking sheet (no pie pan or crimping required) but the final texture.

The crust-to-filling ratio just hits different. Not to mention, I love a handheld pie (though you can absolutely use a fork if you’re feeling classy).

This strawberry goat cheese galette is a bake I made two years ago, but recently retested with a few tweaks. I switched the shortcrust pastry dough to a pie crust (learned personal preference), sweetened the goat cheese (to balance the tang), and removed the original thyme element (though absolutely sprinkle some leaves over the top before serving, cause we love an herbaceous twist).

The spirals on spirals of fresh strawberries stayed, and boy, are they looking GOOD.

The key to a galette is to get a good bake on it, so the crust is crisp, which means leaving it in a little longer than you’d expect. We’re looking for a deep golden brown to get that flake from edge to center.
