For the second pie in my four-part pie series, I wanted to hit on beloved flavors (especially when paired together). Plus, tie in some produce that cuts through this summer heat and horrid humidity.
My mom’s friend said this pie “exploded on [her] taste buds,” if that tells you how good this is.
This lemon poppy seed blueberry pie features a club cracker crust with layers of blueberry pie filling and lemon poppy seed mousse. Topped with fresh whipped cream, I decorated mine with extra lemon curd and blueberries to look like flowers…
Cause I’m super cute.
The club crackers give the most delicious buttery saltiness that balances well with the sweet and sharp fillings. Plus, the layers of texture make for the perfect cold summer pie.
