The inspiration for this tart comes courtesy of a trip to Switzerland that I took post-study abroad semester. I had a strawberry tart in Interlaken that knocked my socks off so much that I tried to go back for more another day, but they were sold out.
So I’ve simply dreamed about it ever since (a decade+ and counting!).
Side note: Swiss summer temps are gloriousssss.

This strawberries and cream tart makes for a perfect summer dessert to showcase (and I mean SHOWcase) fresh summer produce in a creamy, tart-but-sweet bite.
What I’ve learned about myself since that trip: I love a fresh fruit tart. This one features an all-butter crust, vanilla cream filling, and fresh strawberries spiraled on top.

Pie Weights (I use dry beans and rice)
