Sad to say, we only have a few weeks left in rhubarb season (so if you haven’t had any yet, RUN). Its tart-and-sweet vibes make it one of my favorite spring-summer fruits.
If you have a little rhubarb leftover or want to try baking it for the first time, make this single serve rhubarb crisp. It comes together simply and gives you the warm, fruity filling with a spiced, buttery crumble on top that we know and love in a crisp.
You’ll mix together your cut rhubarb with some sugar, cornstarch, and lemon juice, and spread it into a small pan or ramekin. Top with your crumble - a little butter, oats, cinnamon, flour, brown sugar, and salt - and bake!
Enjoy as is or with a scoop of ice cream on top *drooooool*.
