Small batch funfetti cake

It doesn’t matter how old you get; Funfetti cake will always be a hit. There’s something psychological about those colorful sprinkles, I tell ya.

One of the most common questions I get asked about Funfetti recipes is: “Do I have to add the vanilla?”

To be clear, Funfetti cake is literally vanilla cake with sprinkles. If you omit the vanilla, you omit the flavor.

I shared at the start of the year that I wanted to improve my cake decorating skills, so please don’t judge these photos. I’m working on it!

The beauty of this small batch Funfetti cake is that you can slice and stack it into tiers (as pictured) or simply ice it straight from the loaf pan!

Personally, I often find that vanilla cake tends to be a little dry… not this beauty.

After many tests, I landed on this soft, oh-so-delicious, vanilla cake, packed with sprinkles and frosted (as desired) with vanilla buttercream.
