There’s something about a tall, creamy mousse pie that just screams to me in the summer. It’s both refreshing and absolutely decadent, plus the silky cold pairs perfectly with hot (humid - ugh) days.
Since I find that there is rarely a sweet childhood bite that doesn’t absolutely delight a person, this fluffernutter pie felt like a much-needed tasty twist. Just without the white bread…
This recipe is truly quite simple, but you get the fun of a Swiss meringue topping (which whips up easily, with three ingredients, don’t fret).
A salty crunch with the pretzel crust, the smoothest of peanut butter mousses, and marshmallowy meringue on top.
