One Bowl Apple Cake

There’s a version of apple season that involves a lot of dishes, and a version that involves one bowl. This is the second one.

I make this every year around Rosh Hashanah, when apples are everywhere and I don’t have the patience for anything with multiple components. Everything goes into one bowl- wet ingredients, then dry ingredients on top, then the apples folded in last.

Then comes the caramel.

I pour it over the cake once it’s completely cool, and it soaks in just enough to turn the top into something between a glaze and a sauce. It’s the kind of cake that looks like more effort than it actually took.

One more thing- let the cake cool all the way before you pour the caramel, or it’ll just slide right off instead of settling in.

  • 4 apples

  • 320 gr AP flour

  • 240 gr extra virgin olive oil
