there’s something magical about the earthy, slightly sweet taste of matcha – and when you pair it with a creamy cheesecake layer? pure heaven. these matcha cheesecake bars are the perfect balance of soft cookie, rich creaminess, and a little white chocolate sweetness. the marbled top makes them look just as stunning as they taste, and yes – they’re as easy as they are beautiful. this is the kind of treat that feels elegant but comforting, and the best part? it all comes together in one pan ♥︎

we’re layering flavor here – literally. from the matcha cookie base to the creamy cheesecake layer, every ingredient brings something soft, sweet, or rich to the table.

for the cookie dough:

  • unsalted butter: melted for that chewy, soft texture – it helps bring everything together quickly.

  • light brown sugar: adds moisture and a hint of caramel depth that complements the matcha.

  • granulated sugar: balances the richness and helps the cookie dough hold its structure.

  • egg: just one, at room temp, to bind everything and give that soft bite.

  • vanilla extract: because even matcha needs a little warm sweetness.

  • all-purpose flour: the structure of the cookie dough – sifted for a smooth finish.

  • matcha powder: the star! earthy, vibrant, and full of flavor. make sure to sift for the smoothest mix.

  • baking soda: gives the cookie dough a light lift without overpowering the cheesecake layer.

  • salt: just a pinch to balance the sweetness and enhance the matcha.

  • white chocolate chips: creamy and sweet, they melt into the dough for that extra indulgent bite.

for the cheesecake layer:

  • cream cheese: softened and whipped for that luscious, creamy texture.

  • granulated sugar: adds sweetness without overpowering the tangy cream cheese.

  • egg: brings the cheesecake layer together and helps it set perfectly.

  • vanilla extract: a touch of warmth to balance the tang of the cream cheese.

𖦁 how to make matcha cheesecake bars:

these bars are made in layers, but don’t let that scare you – it’s actually super simple, and the end result is so worth it. we’re talking dreamy swirls, soft bites, and that perfect chill-from-the-fridge texture.

step 1: prep your pan

  • preheat your oven to 350°f (175°c) and line an 8x8 baking pan with parchment paper. leave a little overhang so you can lift the bars out easily later.

step 2: make the cookie dough

  • in a bowl, cream together the melted butter, light brown sugar, and granulated sugar until smooth.

  • add in the egg and vanilla extract, mixing until it’s fully combined.

  • sift in the flour, matcha powder, baking soda, and salt – this helps avoid clumps and gives a soft dough.

  • gently fold everything together until a soft dough forms, then mix in the white chocolate chips.

step 3: layer the base

  • press 2/3 of the cookie dough evenly into the bottom of your prepared pan. smooth it out gently – this is your chewy, matcha-flavored foundation.

step 4: make the cheesecake layer

  • in a separate bowl, beat the softened cream cheese and sugar for 2–3 minutes until it’s light, fluffy, and smooth.

  • add in the egg and vanilla extract, mixing just until combined (don’t overmix!).

step 5: assemble & swirl

  • pour the cheesecake mixture over the cookie dough layer and spread it evenly.

  • add a splash of water to the remaining cookie dough to soften it slightly – this makes it easier to dollop.

  • drop spoonfuls of the dough over the cheesecake and gently swirl with a knife or toothpick for that dreamy marbled look.

step 6: bake & chill

  • bake at 350°f for 35–38 minutes, or until the center is set and the edges are lightly golden.

  • let the bars cool completely at room temperature, then refrigerate for at least 2 hours before slicing – the chill time makes them extra clean and creamy.

  • sift the matcha: this keeps your dough smooth and gives that vibrant green color.

  • don’t overmix the cheesecake: once you add the egg, mix just until combined for the best texture.

  • chill before slicing: these bars need time to set – they slice beautifully once chilled!

  • 1 block cream cheese, softened

  • 1/3 cup granulated sugar

  • 1 egg, room temp

  • 1/2 tsp vanilla extract

instructions:

  1. preheat oven to 350°F (175°C) and line an 8x8 baking pan with parchment paper.

  2. in a bowl, cream melted butter, light brown sugar, and granulated sugar.

  3. mix in egg and vanilla until smooth.

  4. sift in flour, matcha, baking soda, and salt. Fold to form a dough.

  5. fold in white chocolate chips.

  6. press 2/3 of the dough into the bottom of your pan.

  7. in a separate bowl, beat cream cheese and sugar until fluffy.

  8. add egg and vanilla; mix until just combined.

  9. pour cheesecake layer over cookie base and spread evenly.

  10. add a splash of water to remaining dough, then dollop and swirl over the top.

  11. bake for 35–38 minutes, until set and edges are golden.

  12. cool completely, then chill in the fridge for at least 2 hours before slicing.
