My good friend, Jimbo. . he lives in the Barva area, just north of Heredia. He’s 87 years old tomorrow! And he’s full of wisdom. .
He and I were talking about old sayings and how some of them reflect the best from the past. Some quotes coincide with today’s culture and some do not. He mentioned Herbert Hoover way back in 1928. .
The phrase “a chicken in every pot” is most famously associated with Herbert Hoover’s 1928 presidential campaign, when it symbolized prosperity, security, and the promise that ordinary Americans could enjoy a better life. But the idea is much older, often traced back to King Henry IV of France, who reportedly wished for every peasant to have a chicken in the pot on Sundays.
In Costa Rica in 2026 and beyond, the phrase can take on a whole new meaning. The “chicken in every pot” doesn’t have to represent wealth—it can represent having enough: good food, a safe home, family, friends, nature, community, less stress, and time to actually enjoy life.
Perhaps the Costa Rican version isn’t “a chicken in every pot and a car in every garage.”
Perhaps it’s “good food on the table, friends around it, and Pura Vida in your heart.”
Jimbo’s 87. . he’s got a chicken in HIS pot and he understand that he’s found his OWN little slice of paradise in Costa Rica in 2026 and beyond!
