Thick, bakery-style cookies are loaded with chopped Oreos and Cookies & Cream Hershey’s bars, then stuffed with a creamy vanilla cheesecake center that stays rich and velvety inside. Every bite is packed with crunchy cookie pieces, melty chocolate, and a smooth cheesecake filling that tastes like the center of an Oreo cheesecake. One of my favorite things about these cookies is the contrast in textures. The edges bake up slightly crisp while the centers stay soft and chewy. The frozen cheesecake filling slowly softens as the cookies cool, creating a creamy surprise hidden inside. Finished with mini Oreos and extra Hershey’s chocolate, these cookies look just as impressive as they taste.
A simple cheesecake filling is prepared and frozen until solid. Meanwhile, a rich cookie dough is made with butter, brown sugar, vanilla, and egg yolks for an extra soft and chewy texture.
