Hello friends, and happy Sunday!

As promised, today I am sharing the first of my bi-weekly meal plans. Before we dive in, let me tell you a bit about what makes these different.

If you’re trying to eat more plants, up your fiber intake, diversify your dinner repertoire, and experiment with new plant-based ingredients, these are for you.

Each bi-weekly meal plan will include 2 dinner recipes plus 1 wildcard item (a breakfast, seasonal veg side dish, meal prep sauce, etc.), along with a complete shopping list organized by grocery store aisle - all in a convenient (ad-free) printable pdf packet. Oh, and the dinner recipes included are designed to be ready in 45 minutes or less!

Why are there only 2 dinners? If you’re looking for a meal plan that guides you in cooking for the entire week, this is not it.

Realistically, the majority of us are not cooking brand new things every night. Most of us try 1 or 2 new recipes per week at most. The rest of the time, we’re relying on those simple meals we can cook on autopilot, as well as the occasional takeout or restaurant meal.

With this in mind, the meal plans are meant to encourage you to try these recipes over the course of 2 weeks while shopping for them once. This is a simple, actionable tool for realistically experimenting with new plant-forward, high-fiber meals at your own pace.

A TNB reader favorite, this chilled salad pairs thick, slippery udon with edamame, crunchy veg (bell peppers, cucumbers, cabbage), and a creamy peanut dressing.

Porridgy orzo and white beans come together with broccoli and cremini mushrooms in this hearty one-pan meal. The leftovers are excellent for lunch the next day.

This rich chia pudding comes together in minutes and requires zero actual cooking. It doubles as a healthy high-fiber breakfast and a satisfying snack for when that chocolate craving strikes at 3pm.
