Summer Seafood Salad

Today’s salad is a fun play on the Italian holiday dish, “insalata di mare.” While traditionally eaten around Christmas time, seafood, especially cold seafood, codes summer to me. When paired with fresh summer produce, a light, tangy dressing, and a crusty baguette, I can’t think of a more perfect beachside lunch. This is one of those dishes that is best prepared ahead of time so the seafood can marinate in all that delicious fresh flavor!
