I have perfected the Chick-fil-A cobb salad at home and I don’t know if I will ever eat it any other way.
Here’s the secret: Perdue chicken tenders in the air fryer (crispy in 8 minutes, no mess) and a homemade apple cider vinaigrette that takes two minutes in a mason jar. I also swapped the bacon for fried shallots from Trader Joe’s and honestly it’s the move. The perfect addition of flavor and crunch.
The Salad
Chopped romaine
Red cabbage
Hard boiled egg
Cherry tomatoes
Fried shallots (Trader Joe’s)
Perdue chicken tenders, air fried and chopped
Apple Cider Vinaigrette
In a mason jar. Shake and done.
1/4 cup olive oil
3 tbsp apple cider vinegar
1 tbsp honey
1 tsp Dijon mustard
1 small garlic clove, minced (or 1/4 tsp garlic powder)
Salt, pepper, pinch of red pepper flakes
Refrigerates for two weeks. I keep three or four homemade dressings made at all times. Just label them with the name and date!
Everything I used:
Our Place air fryer — (on sale at Nordstrom this week — this is the moment to get it)
Perdue chicken tenders — antibiotic-free and lightly breaded. They taste just like CFA.
Mason jars — get a big pack and keep them in your pantry. You will be shocked at how much you use them.
Label maker — I love this thing. The app on your phone makes it so easy to use.
