it’s august. AUGUST!! (how??) after June & July I'm going into this month with new goals: back to basics and consistency. so, i’m starting the month with the plan i’d want someone to hand me right now: high protein food that is EASY, creamy chicken enchiladas, shrimp fried rice, greek smash tacos (!!), and for dessert - brownies! everything is built into your macros so you’ll hit all your goals and enjoy delish food too

every day this week lands between 130 and 152 grams of protein, and it does it with enchiladas and fried rice and literal chocolate involved. here’s the menu:
✔️ breakfast: mcgriddle muffins with blackberries (27g protein), the sausage-cheddar-maple muffins are BACK because i physically cannot stay away from them, one batch on sunday and breakfast is done all week
✔️ lunch: one pan chicken fajita bowls over bone broth rice early in the week (43g protein!!), then your dinner leftovers carry you into friday with creamy chicken enchiladas and spicy shrimp fried rice, so you cook dinner once and eat twice
✔️ snacks: a strawberry kefir smoothie + paleo avocado brownies, and i need a moment for both of these. the smoothie has 37g of protein (in a SNACK?!) plus allll the probiotics from the kefir, and the brownies are fudgy, secretly-avocado, chocolate-chip-topped dessert that’s on your plan every single night
✔️ dinners: sweet potato & ground beef bowl, creamy chicken enchiladas, spicy shrimp fried rice, and greek chicken smashed tacos, all landing between 26 and 41g of protein per serving
two things i have to point out. first, the bone broth rice: we’re cooking the rice in bone broth instead of water, which adds protein and minerals and honestly so much flavor, without changing a single thing about how you make it. laziest upgrade in the whole plan. and second, the enchiladas: the creamy sauce is blended cottage cheese, which is how a cheesy, saucy, rolled-up comfort food dinner ends up with 41g of protein per serving. this is the one your family won’t know is “healthy.”
